This weeks recipe is..........
Treacle Pudding!
Here is the list of needed ingredients to make your cookies!!
2 ½ cups of all purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
¼ teaspoon of salt
2 sticks of butter
½ cup of granulated sugar
3 large eggs, at room temperature
Grazed zest and juice of lemon
⅔ cup of milk, room temperature
Now! Directions!
1. Fill a large pot with water and put a heat safe shallow bowl upside down inside the pot. Bring the water to a boil. Put butter and flour on a 2 ½ quart round baking dish or glass bowl and its lid; put aside for later.
2. Whisk the baking soda, flour, salt, and baking powder in a mixing bowl and set aside. In a bigger mixing bowl, beat the sugar, butter, and the ⅓ cup of syrup or molasses, making sure you scrape along the edges to get the desired consistency. Mix for about 5 minutes, or until your mixture is light and fluffy. Carefully add each egg one at a time, mixing at medium speed until enveloped into the other ingredients, approximately 30 seconds each. Add the zest and juice of the lemon. Scrape down the sides and pour in a little bit of the flour mixture. Pour in some milk and stir. Repeat until both are empty and the mixture is mixed. Use a rubber spatula to scrape the sides and bottom, and then fold it together.
3. Pour the ½ cup of molasses/ syrup into the bottom of the baking dish or glass bowl. Scrape the batter into the dish and smooth top with the rubber spatula. Cover tightly with a lid and place it in the pot on top of the overturned bowl. Make sure that water only comes about halfway up the dish. Cover the pot and let simmer for about 2 ½ hours. Check frequently to ensure that the water doesn’t boil dry.
4. Remove pudding from the pot. Remove the lid and convert the pudding onto a dish. Cover with warmed golden syrup or light molasses and enjoy!
