Pumpkin Pasties Recipe

Welcome back to Althea's Cooking Corner! As you know, Althea is my name and I am a 13 year old Slytherin student, and a member of the amazing SoMe team! I hope you have fun reading my blog post! :D

Today's recipe will be a little longer than usual, so get ready! This is the ingredients you will need today:
For the filling:
2 pie crusts, these can be bought at stores or you can make them yourself
1 cup of pumpkin puree
1/3 cup of brown sugar
2 teaspoons of pumpkin pie spice mix
1 egg
For the topping:
1 egg yolk
2 tablespoons of milk
1/4 cup of turbinado sugar
And there are the ingredients! Here's how you make these crunchy delicious pasties:
1. Preheat the oven to 400°F, around 200°C
2. Line two baking sheets with parchment paper or silicone baking mats.
3. Use a large bowl to whisk pumpkin puree, brown sugar, the egg and spice mix until it's smooth and set aside.
4. Roll out the prepared pie crust dough until it is about ⅛” thick.
5. Using a biscuit cutter or a small bowl that is between 4” and 5” in diameter, cut circles out of the dough, you'll get about 5 from each pie crust.
6. Put the pie crust circles on baking paper and place about 1 ½ tablespoons of the mixed filling in the center of the circle.
7. Dampen your fingers with water and moisten the edges of the circles, don't get it too wet!
8. Pick up two opposite edges of the pie crust circle and bring them together at the top. Think of how you would hold a taco! This helps to keep the filling away from the edges while you seal them. Then gently press the edges together, starting at the top and working your way down to the sides.
9. Lay the half circle back down on the cookie sheet and use a fork to crimp seal the edges together the rest of the way. Repeat with the other hand pies.
10. Brush the top of each with the egg yolk wash and sprinkle with coarse sugar.
11. Using a small sharp knife, cut a small lighting bolt into the center of each hand pie to let steam out. (like the picture above)
12. Bake for 18-22 minutes, or until the crust is golden brown.
13. When done, transfer to a wire rack to cool. Enjoy!
