Edition #01

Hello and Welcome to edition 1 of 'In the Cauldron' our new recipe blog where every few months we will drop a new Harry Potter/IG seasonal baked good for you try out.
So what will we begin with? Well that is a great questions. And are it was October IG last week, or overwise known as the Spooky Season we should start with something to this theme.
And so with that said we snuck into Nina's Mam's house and stole her famous pastie recipe!
We all know pumpkin pasties feature in the Harry Potter books, but have you ever wondered how to make them? Well now is your chance, we have even bought you a sweet and savoury options so there is something for everyone! Now what are you waiting for, time to go preheat that oven (or not if you're anything like me)and get baking.

Pumpkin Pasties

Savoury Edition

Ingredients:
- 1 packet of Puff Pastry
- 1 Pumpkin (roughly chopped)
- 1 Onion (finely diced)
- 1/2 tub of Ricotta Cheese
- Salt and Pepper
- Mustard (optional)
- 1 Egg
- Milk to brush over pastry (1/4 cup roughly)
* Seasonings can be adjusted to personal preference.

 

Recipe:

Roast Pumpkin pieces in Oven for 50mins or until soft.
Meanwhile saute onions and add to a bowl.
Mash roast pumkin and stir in with onion.
Add in half a tub of Ricotta and stir until combined.
Season to taste, using a small teaspoon to add in mustard for extra flavour.
Crack in one egg and mix.
Layout the pastry sheets and cut each sheet into 4 equal squares. Loosely fold each square diagonally in half, and then reopen them.
Use a tablespoon to scope the mixture onto onlf half of the square, ensuring it doesn't touch the edges.
Repeat the above step until all the mixture and pastry sheets have been used.
Fold over the sheets and press down the edges with the back of a fork or your fingers.
Use a knife or a fork to make 3-4 small holes in the top of each pastry.
Lightly brush the tops with milk.
Put Pasties on a baking sheet and bake for 20mins or until puffed up and golden.

Sweet Editon

Ingredients:
- 1 packet of Puff Pastry
- 1/2 cup of Pumpkin Puree from a tin (or follow the savoury steps for roasting and mashing the pumpkin.)
- 1 tablespoon sugar
- A teaspoon of Cinnamon and Nutmeg
- A pinch of cardomon and ginger (optional)
- 1 Egg
- Milk to brush over pastry (1/4 cup roughly)
* Seasonings can be adjusted to personal preference.

 

Recipe:

In a bowl add the puree, sugar and seasonings. Mix until combine.
Season to taste, and adjust as necessary. (ALways adjust recipes in small amounts!)
Crack in one egg and mix.

Allergy Edition

As a fellow allergy buddy, I of course had to include a quick guide to making the above recipes allergy free! I hope if this is relevant to you, it makes sense and you enjoy it just as much as I did :D
 

Swaps:

*Pastry - you can easily subsitute this with vegan, vegetarian or gluten free pastry and continue with the recipe.
*All fillings, pumpkin, spices and onions can be swapped with whatever you prefer.
* Dairy Products, Ricotta and Milk can be replaced with your favourite vegan or lactose free version.
* Eggs can be swapped out Savoury Version for 1/2 an avocado OR 3 tablespoons aquafaba. Or in the Sweet Version 1/4 cup apple sauce OR 1/2 a ripe banana!
