Hello and Welcome to the latest edition of 'In the Cauldron' our recipe blog where we create and share Harry Potter/IG seasonal baked goods for you try out.
So what will our newest creation (otherwise known as recipe) be? Well that is a great questions. And are it the seasons are starting to turn into spring we should start with something to this theme.
So with that said what is more spring like then a lovely light, airy Fairy cake.
We all know cauldron cakes feature in the Harry Potter books, but what about fairy cakes? Well we got to exploring and now is your chance, we have even bought you a sweet and a fun option so there is something for everyone! Now what are you waiting for, time to go preheat that oven (or not if you're anything like me)and get baking.

Note: the following recipe will make 12 standard cupcakes, or 6 larger muffins.

 

Fairy Cakes

Sweet Edition

Ingredients:
- 6oz of Sugar
- 6oz of Butter
- 6oz of Self-Raising Flour
- 3 Eggs
- Sprinkles (colour and shape of your choice)
- Jam or Jelly (optional, though I highly recommend strawberry)
- Icing (optional)


 

Recipe:

Mix the Butter and Sugar in a bowl until combined.
Add the flour and slowly stir in.
In a seprate bowl, crack open the 3 eggs.
Lightly whisk and then slowly add to the cake batter.
Mix until combined. It will be a yellow colour.
Line your cupcake/muffin tin with cupcake cases.
Using 2 teaspoons, evenly distribute the mixture into the cases.
Put the cupcake/muffin tin in the oven and bake for 20mins or until golden.

Decorate:
To decorate, scoop out a small portion for the top of the cupcake and fill with jam/jelly. Then add the sprinkles.
If you are also using icing, add this over the top of the cupcake before adding the sprinkles.
Leftover cake (from the scooping) can be mixed with jam or icing to form cakepops.

Pixie Cakes

Fun Editon

Ingredients:
- 6oz of Sugar
- 6oz of Butter
- 6oz of Self-Raising Flour
- 3 Eggs
- Chocolate Chips (measure with your heart)
- Food colouring (optional, though I highly recommend blue or purple)
- Icing


 

Recipe:

Mix the Butter and Sugar in a bowl until combined.
Add the flour and slowly stir in.
In a seprate bowl, crack open the 3 eggs.
Lightly whisk and then slowly add to the cake batter.
Add in the chocolate chips and mix until combined.
Then add a few drops of food colouring if using.
Line your cupcake/muffin tin with cupcake cases.
Using 2 teaspoons, evenly distribute the mixture into the cases.
Put the cupcake/muffin tin in the oven and bake for 20mins or until golden.

Decorate:
To decorate, cover with icing (blue or purple is great) and add 2 chocolate chips to look like eyes

Allergy Edition

As a fellow allergy buddy, I of course had to include a quick guide to making the above recipes allergy free! I hope if this is relevant to you, it makes sense and you enjoy it just as much as I did :D
 

Swaps:

*This recipe works well with GF flour. Just add in a teaspoon of Xanthan Gum.
*All decorations are optional or can be swapped with whatever you prefer.
* Butter can be replaced with your favourite vegan or lactose free version.
* Eggs can be swapped out for 1/4 cup apple sauce OR 1/4 cup of plain yoghurt!
