Hello and Welcome to the latest edition of 'In the Cauldron' our recipe blog where we create and share Harry Potter/IG seasonal baked goods for you try out.
So what will our newest creation (otherwise known as recipe) be? Well that is a great questions. Now I know Easter was last week, but I mean who can say no to chocolate?
Now what are you waiting for, time to go preheat that oven (or not if you're anything like me)and get baking.
Easter egg nest cakes
Ingredients:
8oz dark chocolate or milk chocolate, broken into small pieces.
2 tbsp golden syrup
2oz butter
2¾oz cornflakes or puffed rice cereal
Mini chocolate eggs
Recipe:
Line a 12-hole muffin tin with paper cases.
Melt the chocolate, golden syrup and butter in a saucepan.
Stir the mixture until smooth.
Remove the saucepan from the heat and gently stir in the cornflakes until all of the cereal is coated in the chocolate.
Divide the mixture between the paper cases and press 3 chocolate mini eggs into the centre of each nest.
Put in the fridge to chill for 1 hour, or until completely set.
Hot Cross Bun Bites
Ingredients:
450g of leftover cake and icing. (chocolate works best)
1/3 cup of Sultanas
1 Tbsp Ground cinnamon
200g Dark chocolate melts
50g White chocolate melts
Recipe:
In a food processor, add the cake, sultanas and cinnamon. Mix until combined and starts to form a soft ball.
Use a tablespoon to scoop the mixture and then roll into balls.
Flatten the base of the ball to form a bun shape.
Pop onto a tray lined with baking paper and put in the freezer for 20 minutes.
To decorate.
Put dark chocolate melts in a microwave safe dish and microwave on high in 30 second bursts, stir in between, until melted.
Using a separate dish, repeat the above step with the white chocolate.
Remove the balls from the freezer, and insert the tip of a fork into the base of a chilled ball.
Dip into dark chocolate to coat, allowing excess to drizzle back into the bowl.
Carefully set the ball, back onto the tray to set.
Repeat with remaining balls and chocolate.
Put the balls into the fridge to chill.
Pour white chocolate into a small resealable bag. Push chocolate into one corner and snip off tip of bag.
Remove the balls from the fridge, and carefully draw crosses over each ball.
Allow to the chocolate to set, before enjoying with friends.
Allergy Edition
As a fellow allergy buddy, I of course had to include a quick guide to making the above recipes allergy free! I hope if this is relevant to you, it makes sense and you enjoy it just as much as I did :D
Swaps:
*Cake can be GF, Dairy Free or Egg free.
*Sultanas can be swapped out with any dried fruit or removed entirely.
* Chocolate and Butter can be replaced with your favourite vegan or lactose free version.
* Cereal can be swapped out for a gf/vegan alternative!
